It’s summer and the freshly cut lavender fills the markets of Provence with its fragrance.


In the area around Sault, the main lavender-farming region and a site protected by UNESCO, the fields of blue stretching as far as the eye can see intermingle with the golden fields of wheat in a superb mix of luminous and fragrant shades.


In Sault, an important stop on the Lavender Road, devotees of the little blue flower organize on August 15 a fair to discover the ancestral activities of cultivating, gathering and distilling lavender to obtain a flacon of that precious essential oil.


In a bucolic setting, after watching lavender-cutters with their sickles battling it out in a championship, you can join in some of the many lavender games for the old and young alike, visit exhibitions and talk with the artists, listen to the lively farandoles from the folklore bands, watch horse and cart parades and equestrian demonstrations and go home with some of the great local products you can buy as you stroll the market.
